Creating Watermelon Rind Pickles is simple! Follow these steps to make your own:

1. Prepare the Rinds: Start by carefully peeling the watermelon rind, removing the green outer skin. Cut the white part into strips or cubes as preferred.
2. Soak the Rinds: In a large bowl, dissolve 1 tablespoon of salt in 2 quarts of water. Add the prepared watermelon rind pieces and soak overnight in the refrigerator.
3. Drain and Rinse: The next day, drain the rinds and rinse them under cold water to remove excess salt. Set aside.
4. Prepare Pickling Liquid: In a large pot, combine sugar, vinegar, water, ground ginger, cinnamon, cloves, allspice (if using), and turmeric. Bring to a boil over medium heat, stirring until the sugar fully dissolves.
5. Add Rinds: Once the mixture is boiling, add your rinsed watermelon rind pieces. Bring back to a boil, then reduce heat to a simmer.
6. Simmer: Allow the rinds to simmer for about 30 minutes or until they’re tender but still firm.
7. Jar the Pickles: Using a slotted spoon, pack the watermelon rinds tightly into sterilized jars. Pour the hot pickling liquid over the rinds, ensuring they are completely submerged.
