Follow these simple steps to create your own Sweet Pumpkin Sourdough:
1. Mix Starter and Water: In a large mixing bowl, combine the active sourdough starter and warm water. Stir well until blended.
2. Add Pumpkin and Spices: Incorporate the pumpkin puree, ground cinnamon, and nutmeg. Mix until smooth.
3. Combine Flours and Salt: In a separate bowl, whisk together all-purpose flour, bread flour, and salt.
4. Form the Dough: Gradually add the flour mixture to the wet ingredients. Stir until a shaggy dough forms, and all the flour is incorporated.
5. Knead the Dough: Turn the dough out onto a floured surface and knead for about 8-10 minutes until it’s smooth and elastic.
6. Bulk Fermentation: Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm area for 4-6 hours, or until it doubles in size. This is the bulk fermentation phase.
7. Shape and Proof: After it has risen, turn the dough out again, shape it into a round loaf, and place it into a proofing basket. Cover with a cloth and let it rest for 1-2 hours, or until it has risen slightly.
8. Preheat the Oven: About 30 minutes before baking, place a Dutch oven in the oven at 450°F (232°C) to preheat.
9. Bake: Gently transfer the dough from the basket to the hot Dutch oven. (You can score the top with a sharp knife if desired.) Cover and bake for 30 minutes, then uncover and bake for an additional 10-15 minutes until golden brown.
